<h1 class="wp-block-heading">Veganer Zitronen-Mohn-Kuchen mit Marzipan-Stückchen: ein Rezept zum Dahinschmelzen&#8230;! </h1>



<p>Ein veganer Zitronen-Mohn-Kuchen mit Marzipan-Stücken, der richtig saftig, nicht zu süß und schön zitronig schmecken sollte: Das war unser Vorhaben für diese Woche. Wir haben ein wenig rumprobiert und herausgekommen ist dieser wahnsinnig aromatische Kuchen, der wirklich extrem einfach zu backen ist! </p>

<h2 class="wp-block-heading">Veganer Zitronen-Mohn-Kuchen: So wird er gebacken </h2>



<p>Wir haben für diesen veganen Kuchen rohen Mohn verwendet, den du vorher immer waschen solltest. Am besten eignet sich hierfür ein sehr feines Sieb. Zuerst werden dann die trockenen Zutaten (bis auf den Zucker) vermengt, dann die feuchten/flüssigen und im nächsten Schritt darf alles zusammen kurz verrührt werden. </p>



<p>Für die tolle Konsistenz sorgt unsere Geheimzutat: veganer Sojaskyr. Er macht den Kuchen richtig locker und verleiht ihm eine tolle Textur. Und damit das vegane Gebäck auch so richtig, richtig saftig wird, beträufeln wir ihn nach dem Backen nochmals mit etwas Zitronensaft. Am besten den Kuchen vorher mit einem Schaschlickspieß mehrmals einstechen, sodass der Saft richtig einziehen kann. </p>

<h2 class="wp-block-heading">Veganer Zitronen-Mohn-Kuchen: Was steckt drin?</h2>



<p><strong>Zitronen</strong>: Die kalorienarmen Zitrusfrüchte liefern nicht nur ordentlich Vitamin C, sie helfen auch, den Säure-Basen-Haushalt auszugleichen. </p>



<p><strong>Veganer Sojaskyr</strong>: Der fettarme Quarkersatz enthält kein Cholesterin, wenig Kalorien und versorgt uns so mit hochwertigem Eiweiß. Wir verwenden gerne <a href="https://www.rewe.de/angebote/karlsruhe-durlach/831009/rewe-markt-raiherwiesenstr-38/?ecid=pla_google_vs_nonbr_(shp%7Clia)ak%7Cangebote_kuehlung_lia_1590770064_124527986817#8287926" target="_blank" rel="noreferrer noopener">dieses Produkt.</a></p>



<p><strong>Mohn</strong>: Neben gesunden Fettsäuren liefert Mohn reichlich Kalium, Kalzium, Magnesium und Eisen. Roh sollten die Samen aber nur sehr sparsam verwendet werden.</p>



<h3 class="wp-block-heading">Tipp: </h3>



<p>Diesen Kuchen kannst du genauso gut mit Limetten backen. Die grüne Schale ist dabei ein toller Hingucker auf dem Zuckerguss! </p>
